Tabula Rasa. I was there for the first 3 months from release and that I have to say had potential if they had given themselves more time. I understand there was a lot of crap happening behind the scenes but that would be my option.
Star Wars Galaxies. That game had so much potential, that was just slaughtered by poor design decisions and crappy server architecture, from the very start.

Temple of Elemental Evil by Troika To this day I still consider it the best Dungeons and Dragons computer game ever made. Turn-Based combat that was identical to the 3.5 edition Dungeons and Dragons rules. I love turn-based tactical games like XCOM, Fallout and Jagged Alliance, oh and the new mobster game Omerta is also quite good too. None of them come close to ToEE though. That being said, I would rather see a turn-based game using the Pathfinder Rules instead of 4e D&D. I would love to see a turn based fantasy RPG like those mentioned above, but instead of being just the single player game, it would have a toolset for modders similar to the Aurora toolset in Neverwinter Nights so players could create endless content for the engine. It would have stylised art using pastel colours as I think that approach has more longevity compared to art that tries to look realistic.
It isn't an MMO, but Baldur's Gate 2. I would love to play it without having to get around shortcomings like quest-wrecking bugs and horrible AI pathing. It would be nice to not have to use the CLUA console and mods in order to see all the content. Although I suppose a game I enjoyed enough to do that modding and spend a great deal of time learning to trip the right console flags to move stuck quest lines along, is worth a revisit as is.
The EE for the original Baldur's Gate didn't fix some of the problems that existed, like AI pathing (there will be party members that are off walking around the map when they should be fighting, or one lost in the map when everyone else has been ready to leave the zone for two minutes) though it did allow a person to play it without having to do so much of the modding.
Its difficult to remake a classic game, though. There's always the question of how far it is acceptable stray from the original, and what made the game worth remaking in the first place- and no two views will be exactly alike. Modern technology also unfortunately doesn't cure all ills, such as design flaws and bugs.

+1 for SWG, at least as far as MMOs go. There were some things that were done so well there, like the player housing. I wish I had played it at the start but I didn't play it till after the "combat upgrade."
Everquest, my second MMORPG.
Final Fantasy IX (9). It was my favorite out of the series. My only hope is that if they DO a remake of it, that there be absolutely no voice acting.
Star Wars Galaxies, without a doubt. It had one of the most in depth and captivating crafting systems and player run economies ive ever seen. Also the open world player housing and faction PvP. I remember finding an awesome player made carbine by a player company called Blastech. I had to planet hop to Corellia and run to his shop in the middle of nowhere. It's experiences like that which will forever endear SWG into my heart.
Dark Age of Camelot I know that you can still play it, but I would love to see OF with SI + ToA (sans artifacts) expansions. New graphics, less bugs, better transitioning.
Horizons. That game had one of the best crafting concepts I have ever seen in a MMO. It also had the only MMO concept where you could actually play a dragon as a class. I know that its still around under another name but they have not really revamped it just bought it and threw some paint on it. I would love to see that game or another game with a dragon class. I miss that.
EQ > Vanguard > SWG Hopefully EQNext takes care of both EQ and Vanguard.

Does Half Life 3 counts? Seriously tho: X-Wing vs. Tie Fighter. How long has it been since a good space simulator has been released? Why not bring back the best ever made?
SWG for sure - as it was at release but then do upgrades to the existing systems - not screw them up or totally revamp combat and institute a PvP Planet(s) for wars.
I want my master Creature Handler/Rifleman back. I loved exploring those planets.

I've got 2 picks for this based on 2 different genres Single Player: Final Fantasy 7 MMO: Anarchy Online
I would choose to have Final Fantasy 7 Remade.
FF 7, 8, 9, 10, 10-2 Legends of Dragoon Chrono Cross and all the .hacks All exactly the same plus some more bonus content and with amazing new graphics.
FF7...The Leveling system, story, gameplay, progression, character developement = magic. If it kept all those things and was revamped with graphics, map layout, cut scene flow. The game was just about perfect, and they would make bundles reselling it. What a game!
Some of the games on my list are actually done and done well. The 8-bit NES game by Capcom . . . Ducktales! Woo-oo! Coming this summer on all modern consoles. I really hope they release a Steam version because it looks so good. NBA Jam was redone recently. Clearly fortune smiles on me. ;) Archon got a decent treatment not long ago. :) Maybe Clash At Demonhead. Not sure how I would feel about a modern version of that. I might still prefer the 8-bit version unless it was a true update without game change like Ducktales. There was an update to Pong called Pong: The Next Level that was so good. I would love to see an even more updated version of that again. Rampart. That would be pretty sweet. Same thing with Warlords (similar type of game for the 2600 with the paddle controls and 4 player head to head action). Mario Bros. I would love to see an expanded version of this classic. Burgertime. Sadaly will never happen due to nobody owning the rights to it anymore. Q-bert. Yes. I want another Q-bert. X-Wing vs. TIE Fighter. I can probably come up with some PC and old school Mac games if I spent some time thinking about it. A number of games and franchises have been given updated or modern gameplay makeovers and I was not happy with them, so I would have to think very carefully about what kind of an update I would be looking for and what they might do to the games due to "outdated" modes of game design. Essentially, would an "update" look unrecognizable to the original and would I still prefer to play the original?

I was originally thinking Zelda: A Link to the Past would be cool, but they've borrowed a lot of stuff from that one for different parts of the newer games, so I guess I feel a bit like I've already seen a bit if a remake there.
If I had to pick just one, I'd pick Final Fantasy 7. I think it would be amazing with updated technology. The only thing I'd be worried about is that a lot of the original team from the game doesn't work for Square Enix anymore so it might lose a lot of what made the original so great. In an ideal situation, though, it would make a fantastic remake.

I'd say EQ with the feel/grouping requirement from before shadows of luclin or vanguard. single player... chrono trigger or final fantasy 4
for MMO's Id say Neocron, the cyberpunk fps mmo that had all kinds of good stuff, vehicles, player/guild housing, a stock market based on what outposts guilds controlled for the factions. all that and more before warcraft came out. But it would definitely need to change somethings to get more up to date but it would be really cool to see it redone.
