Arty's Recipes - Quick And Easy Chicken Pot Pie

After a long days battle in Hammerknell Fortress one doesn't want to be caught slaving over the stove cooking a meal for themselves and their fellow Guardians. As much as Arty loves a home cooked meal from scratch she also appreciates short cuts for those nights she's not in the mood to spend hours in the kitchen.

Quick and Easy Chicken Pot Pie

5 boneless, skinless chicken thighs (or 3 chicken breasts if you prefer)
2 cans cream of potato soup (or any cream soup you desire)
1 bag of frozen vegetables (which ever mix is your favorite!)
1/4 cup chicken broth
1 tsp dried thyme
1 tsp pepper
2 tsp chicken seasoning
1 box refrigerated pie crust (store bought pie crust often comes with 2 pie crusts)

Instructions:

- Set oven to 350 degrees (let it preheat while you prepare! That way you can pop the pie in the minute you finish putting the ingredients together)

- Poach the chicken thighs on the stove top (for extra flavor you can poach the chicken in chicken broth and throw in some cut up onion). Should take 15-20 minutes.

- Let the chicken cool and shred with a fork.

- In a large mixing bowl, toss together the "wet" ingredients first (2 cans of cream of potato soup, shredded chicken, and chicken broth). Then add "dry" ingredients like the spices and veggies.

- In either a cast iron skillet or glass pie dish, place the bottom portion of the pie crust. Then pour the savory pie filling into the dish. Take the other pie crust and lay over the top of the filling.

- Pinch the edges of the pie crusts together and cut vents in the top crust.

- At this point you can put the pie in the oven and let it cook for an hour. OR if you like to prepare meals in advance you can cover the top with foil and freeze the pie to save it for a future easy meal.

And there you have it! A quick hearty meal that can feed up to 4 hungry Guardians!
