I thought this was pretty slick, especially since the nightblade is level 20 and taking on scores of level 28 mobs. Pretty cool!

was indeed pretty impressive. I wonder if dk can do similar with their aoe build
I haven't played the DK yet. I think for the most part, as long as you have a nice AOE and can protect yourself, just about anyone can utilize this strategy.
I saw a video where a guy demonstrated that casters could 100% block while casting. I think that would be pretty huge in a situation like this.

FYI, this is no longer as capable based on the recent patch:
Fixed an issue where some ultimate abilities were improperly generating the ultimate resource. Most notably, this affected:
So, this means that Veil of Blades will not generate ultimate on it's own procs (or not nearly as much), so it will not be possible to cast the ultimate nearly as much. To quote the originator:

A: The only difference is that you wont be able to use the ultimate with EVERY group... youd have to use it every 3rd or 4th group.. other than that every thing works the same
Also, keep in mind that Dragonknights have a similar ultimate with Standard of Might, but they lack the AoE ultimate builder to go along with it until they get inferno (morph to sea of flames) in their 40's. Here's a link to the skill bars I'd use for a similar strategy with the DK:
The first bar is for AoE and max defense, the second bar is for single target max damage and CC. With Volatile armor active, this may work just as well with light armor as heavy armor or a light/heavy mix. Light armor will help keep inferno up much longer and mitigate damage much better versus casters, while heavy armor will obviously allow for taking less physical damage, blocking cost, and healing received. I'd personally go 5 heavy/2 light.
Id hate to point out the obvious here. That's not really tanking. Thats more aoe grinding. You can do similar with a destro staff and i wouldnt call that tanking either.
Ive tanked a little in ESO (I think all EP up toll 40ish) and a little bit of VR. I can safely say that mobs dont behave like that in group dynamics. Damage alone doesnt hold aggro. I have damaged mobs only to peel off me and attack people people afk in the previous room. Ill admit, if everyone is grouped up and you have a good healer, it maybe a nice way to take down the large dungeon pulls.

I've played with some NB medium and heavy armor tanks, both using typically sword & shield and for the level I was playing at, they worked great. Granted it was low level, between 15-23, but it worked as well as any other tank. These builds might fall out in terms of effectiveness at higher level, but I hope that they are still effective later. One of the pleasures of this game in beta has been the varied application of skills across classes and weapons and all other skill sources for players to create different personalized builds.
