Crafting advice needed - 2 or 3 crafting skills on my main?

As a returning player, things seem very different than my initial experience a year ago.  Is it best to have the 3 motif crafts (blacksmith, woodworking and clothing) on your main so that you don't have to find more copies of a motif?  I always thought that you shouldn't have more than two crafts on your main due to skill point deficiency.  This seems to be incorrect thinking on my part as people in game have inferred that they have left over skill points fully leveled.

Any advice would be much appreciated!!

You can level as many professions as you want.  My main at VR14 has full skill points in every craft except for the spotting perks and a few of the provisioning perks (and, I think, snakeblood in alchemy.)
I suggest starting with those 3, and enchanting.  Provisioning and alchemy are easy to grind level.  They also take up the most bag/bank space.
Deconstruct everything that is not Ornate.  Sell the materials... keeping rare upgrade materials and whatever else you want (most of the ingots/lumber/cloth/leather should get sold for coin.)  This will net you almost as much cash as selling the items overall, and is perhaps the fastest means of leveling the crafting.
Research everything you can.  It gives skill, and will be important later.

Finally, enchanting is the longest grind in the game for crafting.  Use the dailies to help (alchemy and provisioning dailies are also a good means of free xp... leveling them this way is fine, but don't build up a big material supply until you have more room in your bags.)  The actual equipment crafts require a ton of materials, so they are best saved for end game rare upgrade material chances... but the 3 consumables are easy to get done.

I agree with what Jairone is stating.  Alchemy/Provisioning are quick to level and resource intensive.  The three "equipment" crafts don't take as much inventory to level, and you can easily level them as you play by deconning all the items you get.  Enchanting is a huge pain to level and also takes a decent amount of inventory.  

As for how many crafts per character, I have the three "equipment" crafts on my character for precisely the reason you pointed out, Motifs.  With points in all three crafts and all three at max level, I still have enough for multiple build types and weapon choices.  I think he has around 275 skill points in total.  As for the other two, I have provisioning/alchemy on one toon and enchanting on an alt.  Only reason enchanting is on my lower level alt is because he was the highest level enchanter I had and I didn't want to grind out all those enchanting levels again.

 

TL:DR  If lack of skill points is your concern, don't worry.  End game you will have plenty.

Unfortunately, when I played previously for about 3 weeks when ESO first came out I created my main with only clothing and alchemy and my secondary character with blacksmithing and provisioning.  I'm already at level 10 blacksmithing with my alt but hopefully it won't be too hard to start it up on my main especially if I can find a crafting mate like I did a year ago.

I had also heard not to place points in crafting until at a higher level.  Is this a good strategy for the three motif crafts?

Yeah, leveling one of the equipment crafts to 10 is pretty quick and easy.  Also, don't worry if you actually level another craft as well, you can always take the points out later with a respec.  For the most part respeccing is pretty cheap.  In fact, its not a bad idea to have all you characters high level in both provisioning and alchemy for the passives they can provide.  Getting to higher levels is easier with more points invested, but once there you can respec and just get the important passive skills, (Medicinal use for alchemy and the one that makes food/drink last longer for provisioning).

As for point distribution early on, I would tend to somewhat agree.  Certain traits, like the one that helps research time are essential to have.  Research is really the only long term aspect for the three equipment crafts.  Also invest early in the hirelings.  Other than that, you can level the craft solely on deconning materials.  I'd even go as far as saying DON'T refine any mats until you can get all three points in the passive that gives better upgrade material chances.  This is really one of the only ways you can get gold upgrade mats.  

You can either buy in game or via GSCH marketplace the refined mats you need for writs, and for self gearing use dropped gear or if you want a crafted set have a guildy help you out and save spending the points until you have more available to you.

Hirelings are nice, but the best materials are linked to your skills.  If you do not have the best extraction skills, you won't get the ultra-high end materials.  So skill points in extraction are a solid investment with hirelings.
That said, just deconstruct to catch up on the crafts you haven't started.  It's not big loss.  You will hit 50 skill mid VR levels if you ONLY deconstruct and research without ever crafting anything *excepting the consumables.*
Frankly, until you hit the VR levels, these are the only worthwhile points spent.  You do not need to craft anything, and if you want a set it is easy to ask a guild member to craft it (just deconstruct some gear and save the materials for them to use!)
