Naay's Recipes - Gingerbread Dwarves

Naay’s – Gingerbread Dwarves

Ingredients:

Th’ Cookie
• 2 tablespoons dark molasses
• 1 tablespoon water
• 1 large whole eeg
• 3-¼ cup floor
• 1 teaspoon bakin’ soda
• ½ teaspoon salt
• 1-½ cups broon sugar (packed)
• 1-½ tablespoons grated orange zest
• 2 teaspoons grin cinnamon
• 1 tablespoon grin ginger
• ½ teaspoon grin cloves
• ¼ teaspoon grin nutmeg
• 1 cup (2 sticks) unsalted butter, cold (cut intae 16 pieces)

Th’ Icin’
• 2 cups sifted confectioner’s sugar (plus 2 tablespoons if needed)
• 2 large eeg whites (at room temperature)
• 1/3 teaspoon cream ay tartar

Preparation:

If ye dornt awreddy hae some, make cutters ay yer dwarves in yer favorite poses. Ye can make ‘em frae strips ay disposable aluminum pans ur cut ‘em frae thin cardboard.

Blend th' molasses, water, an' eeg together in a wee bowl, an' sit aside.

Place th' floor, bakin' soda, salt, broon sugar, orange zest, an' th' spices in a large bowl. Mix ‘em together.

Distribute th' cut butter ower th' floor mixture an' cut it in until th' doogh resembles a coarse meal. Ye coods cheat an' use a food processer if ye loch.

Poor th' wet intae th' dry an' mix until th' doogh comes together. Kneid th' doogh oan a wark surface fur a coople minutes. Divide th' doogh intae 2 slabs. Wrap in plastic wrap an' chill in th' refrigeratur fur 1 tae 2 hoors.

Preheat oven tae 350F. Use parchment pepper oan yer bakin' sheets (Ah prefer mah Silpat liners).

Roll 1 slab ay doogh at a time atween layers ay plastic wrap tae 1/8" thick. Keep doogh cold, it will be easier tae handle. Remove top layer ay plastic an' cut out yer dwarves. Place ‘em oan bakin' sheit wi' 1" spacin'. Efter second slab is dain. Re-roll scraps fur mair dwarves.

Bake until firm, 12 tae 14 minutes Cool completely oan th' bakin' sheit ur wire racks. Dinnae decorate th' cookies until completely cool.

Prepaur th' icin'. Place th' confectioner’s sugar an' th' eeg whites in a bowl an' beat oan law speed fur 30 seconds. Change tae medium 'en tae high an' beat until smooth, abit 3 minutes. Th' icin' shoods be stiff enaw tae pipe. If nae add sugar a wee at a time.

Fill yer pipin' bag, an' usin' a writin' tip, decorate as desired. Allaw icin' tae sit fur a coople ay hoors, if servin' 'at day. Otherwise lit dry overnecht. Ah stair atween layers ay wax pepper in a closed container.

A half batch ay icin' is plenty if pipin' as pictured.
