Naay’s – Easy Rhubarb Jam
Ingredients:
• 5 cups chopped fresh rhubarb stalks
• 3 cups sugar
• 1 3-oonce package strawberry gelatin
• 2 tablespoons butter
Preparation:
In a large bowl, combine rhubarb an' sugar. Cowre an' chill at leest 8 hoors.
Place rhubarb mixture in a large saucepan. Brin' tae a boil. Reduce heat, an' simmer, uncovered fur 12 minutes, stirrin' occasionally. Remove frae heat an' add gelatin an' butter, stirrin' until gelatin dissolves an' butter melts.
Spoon intae hot sterilized jars, fill tae ¼ inch frae top, wipe rims. Cowre wi' lids, screw oan bands. Process in boiling-water bath 5 minutes. (If ye ur gonnae use up th' jelly in short order, jist pit in jars an' refrigerate loch Ah dae.
Makes 4 half pints.
