Naay’s – Rhubarb Bread or Muffins
Ingredients:
• 1-½ cups broon sugar
• 2/3 cup oil
• 1 eeg
• 1 cup soor milk
• 1 teaspoon salt
• 1 teaspoon soda
• 1 teaspoon vanilla
• 2-½ cups floor
• 1-½ cups raw rhubarb, cut up fine
• ½ cup chopped walnuts
Toppin’ (optional)
• ½ cup sugar
• 1 tablespoon butter
Preparation:
If makin' th' toppin', reduce th' broon sugar tae 1 cup. In a wee bowl cut th' butter intae th' sugar tae make th' crumble toppin'.
Combine th' other ingredients in a large bowl an' poor intae buttered an' floored loaf pans ur muffin cups. Sprinkle wi' toppin' if desired.
Bake at 325°F, 50 tae 60 minutes fur 2 loaves, ur 35 tae 40 minutes fur muffins. A toothpick inserted in th' middle shoods come it clean when dain.
