This recipe has been in the family around 35 years or so while it is pumpkin bread it doesn`t have a huge pumpkin taste for those that may not like pumpkin infact most people that said they hated pumpkin etc said it was great and asked how to make it . hope you enjoy it .
Pumpkin Bread
2/3 cup of shorting or 1 cup of veg oil
3 cups of sugar however i normaly use 2 cups of sugar and 1 cup of brown sugar it`s less sweet but more rich in flavor .
4 eggs
1 -15 oz can of pumpkin
2/3 cup of water
3 1/2 cups of all purpose flour
1 1/2 teaspoon salt
1 teaspoon nutmeg
1 teaspoon ground cloves
1 teaspoon cinnamon
1 cup of chopped pecans or walnuts
1 cup of raisins
2 teaspoon baking soda
Blend eggs, water, sugar, pumpkin and oil .
Mix flour,salt,nutmeg,cloves,cinnamon,raisins, pecans or walnuts, and baking soda
then combine both together into a large bowl and mix slowly .
Greese and flour pans I normaly use the old metal 1 pound round coffee cans as it looks good however simple 1 pound loaf baking pans will work .
Pre heat oven to 350 degrees
fill pans or coffee cans etc 3/4 full be sure and even out the raisins nuts into each if able .
and bake for 50 min to a hour or until a toothpick, butter knife etc comes out clean as oven temps and evelation can effect cooking times etc .
makes 3 1 pound loaves .
This recipe is very good I remember a few times i made this and went to a friends family xmas dinner their grandma was pissed and asked who brought that other bread as everyone ate mine but no one ate hers hahaha .
